One of my favorite stops in Southern Oregon, Ruby’s offers a wide variety of breakfast burritos and lunch sandwiches, as well as locally roasted organic coffee, draft beer and cocktails. But your pal SqueetSquatch digs their burger selection the most.


On my most recent visit, I tried their Tatanka Burger, made with Bison meat, melted cheddar, whole green leaf lettuce, sliced tomato, red onion, pickles, and special sauce on a toasted sesame seed bun.


1 Aesthetics — Served open faced, this baby looks soooo appetizing. They use grated cheese for maximum melt, and they definitely do not skimp on the veggies! 7


2 Flavor — Bison meat is sweeter and earthier than beef, with a distinctly “umami” profile, similar to portobello mushroom. 7.5


3 Mouthfeel — Just right. 7


4 Quality/Freshness — Yes, yes! Careful attention has been paid to all the ingredients selected for this masterwork. 8

6 Atmosphere — Intimate and colorful, perfect for Ashland. 9

As advertised: locally sourced food, lovingly prepared, served at reasonable prices. Recommended.
